A wild culinary experience, celebrating spontaneous and untamed nature. A masterclass designed to rediscover forgotten or unknown flavors, presented and narrated by the award-winning chef Mirko Gatti. From exploring the raw ingredients to preparing a refined vegetable raviolo made with turnip, tarragon, and wild herbs: a portrayal of the wild essence in a dish. At the end of the preparation: a tasting session on the terrace of Sala Contessa, overlooking the forests and landscapes where the ingredients come from.

Bio
Mirko Gatti, born in 1981, is the chef and owner of the restaurant Radici, recently renamed ÀBITAT. After various experiences abroad, he returned to his roots to reinterpret the cuisine of his region. His work reflects the flavors of different ecosystems, offering an authentic and primordial gastronomic experience. The restaurant’s philosophy is entirely focused on circularity and zero waste.
