Antonia Klugmann
Chef-patron of L’Argine a Vencò and guest of honour at Orticolario 2025
“Those who know wild herbs approach nature with respect, deep listening, and humility”¹
For Antonia Klugmann, chef and soul of L’Argine a Vencò, true luxury has nothing to do with excess or ostentation.
It is all about authenticity, deep listening, and respect—for the land and its rhythms. The finest ingredients, in her view, are fresh and seasonal, gathered at a specific moment, in a specific place. The raw material becomes something poetic—fleeting, unrepeatable—and it is from this awareness that her idea of cooking begins.
Her creativity is nourished by silence, especially the inner kind: the absence of distractions, external stimuli, the background noise of daily life. Cooking, repeating simple gestures—peeling vegetables, preparing freshly picked herbs—draws her into a space free from distraction. In those gestures, she rediscovers focus and presence. Every dish is born in this space of pure contact with the ingredient.
Her restaurant, L’Argine a Vencò, nestled in the natural landscape of Collio Goriziano, is not just a physical place—it’s a statement of intent. It is a vision made tangible, a space where the territory expresses itself through dishes that are both essential and profound. A place off the beaten path, and for that very reason, rich in meaning.
Devoted to her work in the kitchen, Klugmann is the embodiment of a chef who always puts the dish at the center, never herself.
Sobriety and awareness guide her every move. She sees waste as vulgar, while “learning not to waste and to be sober—that is poetry.” Hers is an ethical cuisine that does not renounce emotion—on the contrary, it amplifies it.
Far from the spotlight of big cities, L’Argine stands as a fixed point. A place where the Italian countryside reveals its true self: the cradle of a cuisine that doesn’t need noise to leave a lasting impression.

In 2006, she opened her first restaurant, and in 2014, she founded L’Argine a Vencò, a space she designed from the ground up in a borderland she feels deeply connected to. Her cuisine is seasonal and original, highlighting local biodiversity and giving great importance to vegetables—both cultivated and wild. Sustainability, waste reduction, and local sourcing are the cornerstones of her philosophy.
Since 2022, she has served as an ambassador for WWF Italy’s Food4Future campaign, which seeks to transform food systems—from production to consumption—to make them more resilient, inclusive, healthy, and sustainable, while respecting both human needs and the planet’s limits.
